Zesty Insta Instantpot Pulled Pork

This winter we sent our ‘Zest’ seasoning to some fellow culinary enthusiasts, who put our farm grown herbs to work. For those unfamiliar, Zest includes parsley, rosemary, lemon verbena, cilantro & orange spice thyme. We're so excited to share their fabulous creations!

 Zesty Insta Instantpot Pulled Pork


  • 1 cup  Apple Cider Vinegar
  • 1 cup water
  • 2 onions, sliced
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 1 tbsp BBQ sauce, or sauce of choice
  • 3 garlic cloves, chopped
  • 2 red/green peppers, sliced
  • 1tbsp Zest Seasoning


  1. Place 1 cup apple cider vinegar and 1 cup water in bottom of Instant Pot.
  2. Place pork roast on rack in Instant Pot.
  3. On top add the following: onions, brown sugar, ketchup, BBQ sauce, garlic, peppers, Zest
  4. Set your Instant Pot to meat setting and set for 15 minutes. Allow to naturally vent for 10 minutes after cook time is done.
  5. Remove meat and veg and shred and set aside.
  6. Make a cornstarch slurry and add to liquid, bring to a boil. Remove from heat and add sauce to pork.
  7. Serve as fajitas or on rice. Coleslaw (mine is a homemade canned coleslaw) is a wonderful addition. Enjoy!
